Recipe : Cucumber Pineapple Sandwich

Ingredients:
Bread Slices
Butter
Grated Cheese
Cucumber
Pineapple

Green Chutney: 
Fresh mint leaves, Coriander, Ginger, Garlic, Green chillies, Sugar, Salt, Lemon juice.

Preparation:
Apply one layer of butter, one layer of chutney and one layer of cucumber on each slice of the bread. Keep the slices of the bread on one another and cut it into thin strips (1inch). sprinkle grated cheese on the top. Keep the pineapple piece on each strip.

Recipe - Pin Wheel Sandwich

Ingredients: one loaf of bread / bread (If it is a loaf, you will need to cut it into slices)
Butter

Filling:
Mayonnaise
Tomato Ketchup
Chilli flakes
Black pepper
Salt to taste

Mix all the above ingredients in a bowl. Take a slice of bread. Apply butter on one side of the bread. Spread the filling on the buttered side of the bread evenly. Roll the bread slowly taking care not break it.Wrap the roll in a grease proof paper and place it in the refrigerator for 30 minutes. When set, remove the paper and cut in into 2cm thick slices.

Variations:
1. Mix Mayonnaise, chopped lettuce leaves, grated cheese, salt & pepper
2. Jam or Marmalade
3. Corriander & Mint chutney

Recipe - Chickoo Smoothie

Ingredients:

Chickoo - 1
Dates     - 2
Vanilla Essence
Sugar
Coco powder / dark chocolate - 1 spoon
Milk


Soak dates for 10 - 15 minutes. Grind chickoo, dates and sugar in mixer with little water. Put 2-3 drops vanilla essence, coco powder. Grind it for one minute. Finally put Milk and grind the mixture. Keep it in the refrigerator to cool.

Chickoo smoothie is ready to drink.

Recipe - Dosa

Ingredients: 

1/2 small vati Tur dal
1/2 small vati Channa dal
3/4 small vati Urad dal
1 small vati Rice

Clean the above, wash and soak with 2 kashmir chillies, few black pepper corns for 4 hours and then grind with salt as per taste - don't grind very fine.  It should be coarse.

Now give tadka of rai, kadipatta,  add ginger and green chillies too and the batter is ready to make instant dosas.  Eat with chatni or butter or curds.

Recipe - Smoked Chicken

Ingredients: 
Chicken - 750 gm (Boneless)
Marinate:
Curd - 1 and 1/2 bowl
Corriander powder - 1 tea spoon
Cumin powder - 1 tea spoon
Red chilli powder - 2 tea spoon
Garam masala powder - 1 tea spoon
Turmeric - 1/2 tea spoon
Garlic - 1tea spoon
Ginger - 1 and 1/2 tea spoon
Black salt - 1/2 tea spoon
Refined oil - 1/4 bowl
Orange red colour (Bush) - 1/4 tea spoon
Salt to taste

Method: Marinate chicken with all the above ingredients for 1/2 hour. Boil the chicken in a pressure cooker. Give only 2 whistles. Take a pan, Put the chicken in the pan to remove the excess water. Once the excess chicken is dry, put a small bowl in the centre of the pan. Take 1-2 pieces of coal. burn them. Once they are hot, put them in the bowl of the pan. Put 2-3 drops of oil on the hot coal. Immediately cover the pan with the lid. Let the smoke mix with the chicken properly.Let it remain 2-3 minutes. Once done, remove the bowl and the coal. Serve with onion rings and lemon.

Recipe - Veg Cheese balls...

Ingredients:  Boiled potatoes
                   Cabbage
                   Carrots
                   Green chillies, Pudina and Corriander (finely chopped)
                   Bread slices 2-3
                   Cheese spread
                   Salt to taste

Preparation time: 15mts

Method:

Grate boiled potatoes, cabbage and carrots. Put cheese spread, green chillies, corriander, pudina and salt into the mixture.Place the bread slices in a bowl. Put water in the bowl to soak the slices. crush / make small pieces of the slices. Add bread pieces to the mixture.  Make small balls of the dough and deep fry. To hold the balls stick tooth pick on it. Eat the cheese balls with sauce...

Recipe - Soya kheema

Very easy to make and healthy too.

Ingredients: 1 medium sized onion (finely chopped)
                   1 medium sized tomato (finely chopped)
                   1 bowl of green leafy vegetable (either Methi / Palak / Dil / Spring onion)
                   1/4 bowl of Soya kheema
                   Garam masala
                   Red Chilli powder
                   Turmeric
                   Salt to taste

Preparation time: 5mts

Put oil in a pan. Put onion, tomatoes , Garam Masala, Chilli Powder, Turmeric and Salt. Stir fry for 2 minutes. Put any of the green leafy vegetable mentioned above. Stir for one minute. At the end, put the soya kheema. Sprinkle few drops of water, stir it and switch off the gas.

You can eat soya kheema with Chapatti, Dosa, Bread.....Tastes good with bread ! ! !
